Farm Fresh Omelet

Pasture Raised Eggs 3                                                                       
Fresh Baby Spinach 1 cup
Chopped Mushrooms 1/4 cup
Chopped onions 1/4 cup
Organic Coconut Oil 1 tbsp.

Directions:

Place a non-stick pan on the burner over medium heat. Coat pan with oil and sauté onions and mushrooms until soft. Add spinach and continue for 1 minute only. Then add whisked eggs. Allow eggs to coat pan while continuing to push down on sides of the pan until eggs set on the bottom. Then flip one half over unto the other and slide out for a delicious, healthy start to your morning.
