Shrimp With Greens

2 tbsp coconut butter or extra virgin olive oil                                                                        
2 medium onions, finely chopped
1/2 cup thinly sliced scallion
2 garlic cloves, finely chopped
1 teaspoon of sea salt
½ teaspoon pepper
2-pounds medium or large shrimp, peeled and deveined
1/2 to 1 cup water
2 cups of baby spinach or mixed greens



With your stove on medium heat, warm the oil in a large skillet. Pour in the onions, scallions, garlic, salt, 1/4 teaspoon pepper, and stir until soft for about 5 minutes. Then add shrimp; stir and cook for an addition 1 minute. Add 1/2 cup water and simmer gently, stirring, until shrimp are just cooked thoroughly for 2 to 3 minutes. Season with salt and pepper, place on top of greens and serve. Drizzle a little olive oil on top if desired.
